Perched on Ibiza's western coast, Can Soleil commands a 180-degree panorama from Cap Blanc to Formentera. The main house and two guest pavilions sit within 4,000 sqm of terraced Mediterranean gardens, connected by stone pathways and anchored by a 25-metre infinity pool that appears to dissolve into the Balearic Sea. A full-time team of six, including a private chef trained at Can Dani in Formentera, ensures the only decision you make is whether to take the tender to the beach or stay by the pool. The main house centres on a double-height living space with retractable glass walls on three sides. When open, the room becomes an extension of the terrace - the breeze off the Balearic Sea replacing any need for air conditioning from May through October. The kitchen is professional-grade, fitted with a La Cornue range and a walk-in cold room, though most guests never see it because the chef serves everything either poolside or on the lower dining terrace that juts out toward the cliff edge. The two guest pavilions sit at either end of the garden, each containing two bedroom suites with independent entrances. This layout works particularly well for families travelling together or groups who value their own space. The west pavilion catches the last light of the day and has a private plunge pool; the east pavilion opens onto a walled garden with an outdoor shower and direct access to the cliff path. That cliff path is one of Can Soleil's defining features. Cut into the limestone by the previous owner in the 1990s, it descends 80 metres through wild rosemary and rock samphire to a semi-private cove with a pebble beach and calm, clear water. The property keeps two paddleboards and a set of snorkelling equipment at the bottom. The tender - a 7-metre Beneteau - is moored at the nearby marina and available daily with a skipper for trips to Formentera, Es Vedra, or the beach restaurants along Cala Jondal. The helipad sits on the eastern boundary, offering a 12-minute transfer from Ibiza airport that bypasses the summer traffic entirely. Most guests who have experienced the 45-minute crawl along the PM-803 in August opt for the helicopter on return visits. Summer evenings at Can Soleil tend to follow a pattern: afternoon by the pool, sundowners on the upper terrace watching the sky turn amber over Es Vedra, then dinner on the lower terrace as the lights of Sant Antoni appear across the bay. The chef's menus lean Mediterranean with Balearic ingredients - grilled local fish, Ibizan herbs, and seasonal produce from the Santa Gertrudis market. Wine is sourced from a curated cellar of 200 bottles, heavy on Priorat and Ribera del Duero.
